Ingredients
1–2 large baking or sweet potatoes
1/2 cup diced red pepper
1/4 cup diced red onion
1/4 cup milk
2 tbsp yellow mustard
1 tbsp paprika
1 tsp butter
Directions
Slice potatoes into small cubes and place into a pot of boiling water for 15 minutes. When finished, drain the pot and add milk and butter before mashing potatoes with a spoon or potato smasher. Add the peppers, red onion, mustard and half of the paprika into the pot and mash again. Place the mashed potatoes into a glass oven-safe baking pan and bake for 15 minutes at 350 degrees F. Remove, and let it sit for one minute. Dish out into bowls and spread rest of paprika on top.
